Night harvested to preserve freshness, the fruit underwent a cool 7 day fermentation with Rhne isolate yeast and was hand plunged three times daily for optimal extraction. Maturation followed in 75% new French oak hogsheads for 12 months, adding depth and polish. In the glass, it wears a deep ruby
