A brief period of cold maceration followed harvest, designed to gently coax out vibrant colour and aromatics while avoiding excessive tannin extraction. Fermentation took place at cool temperatures, kept below 26C, with gentle pump overs to enhance purity and finesse. The young wine was then matured for six months in custom
