Vines are rigorously pruned for quality, with fruit night harvested and crushed into small open top fermenters. After 24 hours of cold soak, fermentation began using a Rhne isolate yeast. The wine spent 11 days on skins, with gentle pump overs three times daily, before being matured in French and American oak
