Del Professore, Vermouth di Torino Superiore NSW part is destemmed and fermentedBased on a single vineyard Barolo wine from producer Ettore Germano. Once the wine is finished ageing and could be bottled as Barolo, it is further aged with a blend of herbs and spices for 3 to 6 months. The proprietary blend used to flavour this vermouth includes wormwood, rhubarb, vanilla, chincona, and cloves. Another level of complexity for vermouth with a fine and elegant tannic structure.
