It is produced entirely with Monica grapes, harvested and selected only by hand. Fermentation takes place, with maceration for 10 12 days, in steel at a controlled temperature of 28 30 ? C. After the malolactic fermentation, carried out in vitrified concrete jars for 10 15 days, the wine ages for 12 months in
